roasted asparagus :: simple dinner

last week we all got home late in the evening and again with no plans for dinner, i grabbed a couple of ingredients from the fridge and threw these together.
 they ended up being super yummy and even the kids were asking for more.

this is how i made them:

trim, rinse and pat dry asparagus
toss with a drizzle of olive oil, some minced garlic, pepper, and smoked sea salt (from TJ's)
roast in the oven for about 5-10 minutes

meanwhile toast whatever bread you have on hand
i think sourdough would be super yummy but i only had wheat and it was still yum

cut up some tomatoes and toss with a drizzle of olive oil and some balsamic vinegar
time to stack it up:
toast, feta cheese, tomatoes and asparagus on top
go make some more because you will want more
