I love soups and I love my blender. When these two loves can come together I get really happy.
*2 Tbs olive oil
*1 onion, chopped
*10 sliced zucchini
*1 c chicken broth
*1 Boursin cheese
*1 tsp dried oregano
salt and pepper to taste
1. Heat olive oil in lg sauce pan. Add onion and cook slowly for about 5 mins., until soft.
2. Add zucchini and oregano, with salt and pepper to taste. Cover and cook stirring frequently for about 10 mins.
3. Place zucchini mixture and all other ingredients into blender and blend in batches.
This recipe is kind of a combo from 2 different recipes. One is from a friend of a friend and the other is a zucchini soup from The Soup Bible. Both recipes are so yummy on their own, but for some reason this is a little easier for me and it comes out perfect. This was perfect the other day when it was cold and raining outside.
On a completely different topic...These days are over. Although we had been planning to get a big boy bed for Julian and I felt completely prepared and a little excited to move on to the next stage, I am a little sad to see it go. The baby stage that had so encompassed our lives the last 4 years is over. No more babies. I also think about this fact with some enthusiasm.
